Course 1. Spinach and Pomegranate Salad Paired with White Chambourcin: Fresh spinach tossed in a Raspberry champagne vinaigrette, topped with pomegranate, red beets, raspberries, toasted pine nuts, heirloom toybox tomatoes, and feta cheese.
Course 2. Prosciutto wrapped asparagus Paired with Chardonel: Grilled asparagus wrapped with prosciutto, served with an over easy egg yolk, a Berlyn balsamic reduction and shaved pecorino cheese.
Course 3. Chicken Caprese Paired with Berlyn: Slow Roasted Chicken Breast stuffed with fresh spinach, mozzarella, sweet cream butter, topped with heirloom tomatoes, julienned basil, black Falk salt, served over a bed of couscous and a Berlyn balsamic reduction.
Course 4. Devils Chocolate Tart Paired with Augie’s Blackberry Dessert Wine: Dark Chocolate tart served with Augie’s Blackberry Port creme foam, topped with a chocolate raspberry drizzle.
